Founded by Luke after a decade-long obsession with Japanese culinary craft, Uminari Ramen brings authentic Tokyo and Sapporo-style ramen to Scotland. Moving away from heavy tonkotsu, Uminari focuses on balanced chicken-and-dashi double broths, handmade tares, and carefully crafted toppings - like 24-hour marinated eggs and order-seared sous vide pork belly. Proper Japanese ramen, redefined locally.
